Beef Fried Rice

INGREDIENTS

 

• 2 Cups of White Rice 🍚

• 1 Pound of Beef 🥩

• 3–4 Large Eggs 🥚

• 1 Large Yellow Onion 🧅

• 2 Cloves of Garlic 🧄

• Bag of Frozen Peas and Carrots 🥕

• 2 Tablespoons of Toasted Sesame Oil

• 1 Cup of Soy Sauce 🎇

 
 

INSTRUCTIONS

1) Ideally, you should make your white rice ahead of time.

I make mine in my rice cooker the day before and refrigerate it.

2) Slice the beef thinly again the grain.

3) Add toasted sesame oil to a large pan over medium-high heat.

4) Add the beef and stir-fry for 4–5 minutes until browned. Remove and set aside.

5) Crack the eggs, adding them to one side of the pan and scramble them with a silicone spatula.

6) Chop up the onion and garlic (most easily with a garlic rocker press!), and add them and the frozen peas and carrots on the other side of the pan.

7) Keep the scrambled eggs and vegetables separated while they cook, stirring them separately on each side of the pan.

8) As the eggs are just about set, stir them all together, and add in the rice, using a spoon to break up the rice clumps.

9) Stir-fry the rice, eggs, and vegetables for a few minutes until heated through.

10) Return the beef back to the skillet, stirring and adding the soy sauce.

Add salt, pepper, and more soy sauce to taste. Enjoy!

Day-old rice works best for fried rice!

My very favorite part of fried rice is the eggs, and my toddler is obsessed with peas.

I add in extra of both! Make it your own and add more of what you love.

VARIATIONS

If you have green onions on hand, add in at the very end, cooking for about a minute.

You can make this dish with no meat, or with chicken, shrimp, scallops, or tofu!
