Cheese Quesadillas
INGREDIENTS
INSTRUCTIONS
1) Heat up a pan on medium-high heat.
2) Place a tortilla on the pan, and sprinkle on the shredded cheese.
3) It’s not rocket science! 😂 If you like a lot of cheese, add as much as you reasonably can. (My method.)
4) Place another tortilla on top, smooshing it down and creating a tortilla and cheese sandwich.
5) Heat up for a few minutes, and then with a large spatula (ideally, when you can see that your cheese has started to melt and won’t fling shredded cheese everywhere) carefully flip over and cook for another few minutes.
6) Cook until the tortillas are toasty brown, and enjoy!

I once made these for a friend who made a face and said, “Mmm. You didn’t add any spices?” 👀
I personally think these are delicious as is, super plain and straightforward. (My toddler does too!)
I serve them with sour cream or especially love dipping them in my favorite super simple guacamole.
VARIATIONS
You can add beef, chicken, mushrooms, cilantro, or whatever your heart desires!
If I have leftover chicken in the fridge, I love to cut it into slices and add.
You can add a pinch of chili powder or taco seasoning to give this more flavor.
You can also use corn tortillas instead of flour!
