INGREDIENTS

• 8 Russet Potatoes 🥔

• 2 Cups of Water 💦

• 2 Cups of Whole Milk 🥛

• ¼ Cup of Butter 🧈

• ½ Tablespoon of Salt 🧂

• 1 teaspoon of Pepper

INSTRUCTIONS

1) Wash and peel the potatoes.

2) Cut each potato into 3–4 chunks.

3) Place potatoes and 2 cups of water in the Instant Pot.

4) Set the Instant Pot to “Pressure Cook” for 15 minutes.

5) When the potatoes are finished cooking in the Instant Pot, strain the water out of the pot.

6) Put potatoes back in the pot and add the milk, butter, salt, and pepper.

7) Use a hand mixer to blend everything together.

ETC.

I use whole milk, but you could also use 2% (or whatever your heart desires! 🥛)

Be careful to not add too much milk, but if your potatoes seem too thick, add a little milk and keep whisking until you reach the consistency that looks the most heavenly to you. 😉✨

VARIATIONS

After you wash your potatoes, you can peel them fully, partially, or not at all!

I personally love potato skins and have made these mashed potatoes all ways.

My favorite these days is to peel most of the potatoes, but leave some skin.

My husband’s nickname is “Buttersauce” for a reason… if you want to really amp up the “healthiness” of these potatoes (not! 😂), load them up with butter. (“As gravy!”)
