Mushroom Spinach and Cheese Egg Bake
INGREDIENTS
• 8 Large Eggs 🥚
• ½ Cup of Whole Milk 🥛
• 1 ½ Cup of Fresh Spinach 🍃
• 1 ½ Cup of White Mushrooms 🍄
• 1 ¼ Cup of Fine Shredded Colby Jack Cheese 🧀
• 1 teaspoon of Salt 🧂
• ¼ teaspoon of Pepper ✨
• 1 Tablespoon of Butter 🧈
INSTRUCTIONS
1) Preheat the oven to 375°F and grease a 9x13 baking dish with butter or cooking spray.
2) In a large pan, heat butter on medium heat.
3) Add the mushrooms for 3–4 minutes, then cook the spinach for 1–2 minutes until wilted. Remove from heat.
4) Put eggs, milk, salt, and pepper into a large bowl and whisk together.
5) Spread out the cooked mushrooms and spinach evenly in the baking dish.
6) Sprinkle most of the cheese over the vegetables, and then pour the egg mixture overtop.
7) Sprinkle the rest of the cheese on top.
8) Place the baking dish in the oven and bake for 30–35 minutes.
9) Remove from oven, allow to cool for five minutes, and serve. Enjoy!
VARIATIONS
If you have the time to cook bacon beforehand, a few (or more) strips of crumbled bacon also makes this recipe delicious!
I’ve also had this with green onions and chunks of bread added as well.
